Why is our Calamari different?
Our Calamari is from a species of squid called Dosidicus Gigas or Humboldt Squid. It is caught in very deep water, East of New Zealand and follows the Humboldt Current right up to North America. It can reach up to 2 metres in length and weigh up to 50 kilos.
The Humboldt squid lives for approximately 12 to 18 months, reproducing only once in its lifetime but can produce multiple offspring.
Unfortunately its predators such as Sharks, Marlin and Tuna are being fished out so its numbers are increasing rapidly and it is taking over the Pacific Ocean eating everything in its path. Therefore it is the perfect sustainable seafood. Unlike smaller species of squid/calamari, the Humboldt Squid is very large and as a result all the skin and membrane can be removed to leave pure Calamari steaks which are always TENDER.
